If you’re looking for a light recipe that is packed with flavor, this is it! I think I could eat Mexican for every meal and never get tired of it.
QUINOA TACO SALAD
INGREDIENTS:
- 2 cups chopped romaine lettuce
- ¼ cup cooked quinoa (I like to cook my quinoa in chicken broth)
- ¼ cup black beans
- 1 tomato, diced
- ¼ cup chopped mango
- 10 blue corn chips, crushed
- ½ avocado, diced
- 2 tablespoons salsa
- 1 tablespoon southwest ranch dressing (it’s great without dressing as well!)
Directions:
- In serving bowl, add romaine lettuce and top with quinoa, beans, tomato, mango, chips, avocado, and salsa.
- Drizzle with southwest ranch dressing.
