I have recipes that I make as a tradition for particular holidays and this one is my 4th of July picnic recipe! It is light and keeps well for several days in the refrigerator.
Orzo Pasta Salad
I usually just start throwing things in so feel free to stray from these measurements!
Ingredients:
1 bag orzo pasta
3 tbl pine nuts
¼ cup Feta cheese
½ cup cucumber (peeled and diced)
2 cups red and/or yellow cherry tomatoes sliced
½ yellow pepper chopped
½ green pepper chopped
1 jar marinated artichokes sliced (use marinade juice as well)
1 tbl fresh basil chopped
1 tbl fresh parsley chopped
2 tablespoons olive oil
2 tablespoons balsamic vinegar
1 tbl lemon juice
1/4 teaspoon salt
1/4 teaspoon pepper
1 tsp garlic powder
1/2 cup parmesan cheese
1/4 cup italian salad dressing
Directions:
Cook Pasta and mix all ingredients together!
Yield: 8 servings. Store in the refrigerator for up to 1 week.
